"Good For You" Bars

Hands-down some of the yummiest bars I've ever had. And SO easy. I was surprised just how many of the ingredients I had on hand already in my kitchen.

"Good For You" Bars

4 cups of oats
1 cup of packed brown sugar
1/2 cup corn syrup
1 tsp vanilla
1/3 cup of creamy peanut butter

Mix all ingredients and press into a 9 x 11 pan. Bake at 375 for 12-14 minutes, until edges are golden brown.

1 pkg. of butterscotch chips
1 cup of chocolate chips
2/3 cup of peanut butter
1 cup chopped dry roasted peanuts

Melt the chips and peanut butter until smooth. Add the peanuts and pour over the bottom mixture.  Let stand in fridge for about 1 hour or until firm.

Ziti with Meat Sauce

On the menu this week!

Got this recipe from my lovely mother and wanted to share it with you all.

Love me some pasta!  Really simple and easy dish to prepare that will definitely leave your tummy very satisfied. Feed the hunger. Carb load.

Ziti with Meat Sauce

Serves 6

1 28 oz. can diced tomatoes
l red onion
Olive oil
1 garlic clove
1 lb. ground sirloin or round
3 sweet Italian sausages, cut into rough chunks
1 bunch parsley
Basil, salt, and pepper, to taste
1 lb. ziti
Ricotta and grated Parmesan

Drain juice from tomatoes and reserve liquid.  Simmer, covered, in a large pot.

Chop onion.  Saute, using enough olive oil to coat the bottom of the skillet, over medium-low heat until translucent. Mince garlic and add to the onion.

Put sauteed onions and garlic into the tomato pot.

Brown chopped meat and sausage in skillet.  Add to tomato pot.

Add cut up parsley and basil; season with salt and pepper to taste.  Simmer for several hours.   Add some reserved tomato juice, if needed.

Cook pasta according to package directions until al dente.

Spoon pasta into bowls with sauce.  Add a dollop of ricotta cheese and a sprinkle of Parmesan, to taste.  Finish with fresh basil.
